
Ingredients
1-1/3 cup flour
pinch of salt
3/4 teaspoon baking soda
1/4 teaspoon baking powder
2/3 cup brown sugar
3 large eggs, lightly beaten
2 ripe bananas, mashed
1/4 cup vegetable oil
1/4 cup Tofutti sour cream
1/2 cup walnuts, chopped (optional)
Directions
Preheat the oven to 350. Mix dry ingredients in a bowl and make a well in the centre. Next, lightly beat eggs and add oil, bananas and Tofutti sour cream. Add wet ingredients to the dry ingredients and stir till combined. Pour into greased loaf pan. Bake in oven for 40 to 45 minutes or until a tooth pick comes out clean.
