The humble apple may not be touted as a “superfruit,” but its antioxidant-rich compounds do pack a potent nutritional punch. Plus, apples are an excellent source of soluble fibre, as well as immune-boosting vitamin C.
Moreover, clinical studies suggest apples also promote heart health by reducing the risk of heart attacks and stroke. Researchers who studied frequent apple eaters found the fruit was a key ingredient in lowering cholesterol levels.
To celebrate the local apple harvest, the folks at Tofutti have come up with the following three delicious, dairy-free and easy-to-prepare recipes to enjoy an apple a day!
Apple slices and cinnamon dip
Here’s a healthy snack the whole family can enjoy! In a mixing bowl, combine a container of softened plain Tofutti Better Than Cream Cheese with a tablespoon of brown sugar, half a teaspoon of cinnamon and half a teaspoon of vanilla extract. Blend using an electric mixer until smooth. Serve with fresh apple slices.
Apple pie smoothie
In a blender, combine a whole deseeded and quartered apple with two generous scoops of vanilla flavoured Tofutti Premium non-dairy frozen dessert. Add a tablespoon of honey, or other sweetener, and half a teaspoon of apple pie spice. Blend until smooth, and enjoy!
Grilled apple sandwich
Brush olive oil, or spread vegan margarine, on two slices of crispy bread. Layer thin slices of apple evenly upon the un-oiled surface of one bread slice. Top the apple with Tofutti Soy Cheese Slices and the remaining slice of bread. In a skillet over medium-high heat, cook until the sandwich is golden brown on both sides.
