We all know that having sandwiches day after day can get pretty boring. That’s where we can help. We’ve come up with some novel ideas to shake up your lunch routine. You may want to hide your lunch from your co-workers, who will be staring in envy at your luscious lunch!
Afternoon Tea-Style Tortilla Roll-Ups
1 jar marinated artichokes, drained and cut into small pieces
1 red pepper, diced
1 tsp oregano
1 garlic clove, minced
4 large flour tortillas
In a small bowl, mix together all ingredients except the tortillas. Lay tortillas flat on a cutting board and then spread with filling. Roll them up and wrap tightly with plastic wrap. Refrigerate several hours to set. Remove from fridge and place on a cutting board. Trim ends. Slice diagonally into one-inch slices and serve, or pack into reusable lunch containers.
New-Style Egg Salad Pitas
4 eggs, hard-boiled
1/2 red onion, finely diced
1/2 tsp salt
1/2 tsp pepper
1 pkg Tofutti Better Than Cream Cheese 4 soft pocket-less pitas
4 romaine lettuce leaves
Peel hard-boiled eggs and discard shells. In a bowl, mash the eggs with a fork to a medium paste. Add in chopped onion, salt and pepper and stir. Mash the Tofutti Better Than Cream Cheese lightly to soften and add to egg mixture. Mash again. Mixture will be thick and creamy.
Place each pita on a cutting board. Place one large leaf of romaine lettuce on each. Add 2 to 3 tbsp of egg filling on one half of each pita. Fold pitas in half and wrap securely with plastic wrap. Chill until serving time.
Pumpernickel Bread and Spinach Dip
Serve your favourite soup or salad alongside this popular bread and spinach dip for a memorable lunch.
1 pkg Tofutti Sour Supreme
1 pkg spinach, cooked and drained
2 cloves garlic, minced
1 tsp dried basil
1 tsp oregano
2 slices of pumpernickel bread (or small pumpernickel round)
In a medium-size bowl, mix together Tofutti Better Than Cream Cheese, Sour Supreme, spinach, garlic, basil and oregano and stir until blended and creamy. Spoon into a one-serving-size reusable container. Pack bread slices or bread bowl in another lunch container. At lunchtime, spoon dip onto bread slices or into mini bread bowl. Rip apart and enjoy!
