Rocky Road Bars

Valentine’s Day is all about showing others how much we care about them.  On February 14th, the tradition is to give your Valentine a gift like chocolates, a card, jewellery or flowers.

Valentine’s Day is named after a Christian martyr and dates back to the 5th century but has origins in the Roman holiday Lupercalia. The first mail-posted Valentine was recorded in 1806!

This year say “I Love You” by making a homemade Valentine’s treat.

Chocolate Marshmallow Rocky Roads

1 bag chocolate chips

1 bag coloured mini marshmallows

¼ cup non-dairy margarine

In a large pot, melt margarine. Add chocolate chips and stir until melted. Add mini marshmallows and let melt slightly, stirring over low heat.  Lightly grease a 9-inch baking pan.  Pour mixture into pan, wet hands and smooth down mixture.  Let set in the fridge and cut into bars.

For a special Valentine’s Day dessert, serve Rocky Roads alongside bowls of TOFUTTI PREMIUM® non-dairy frozen dessert

Valentine’s Day Chocolate Bark and Dairy-Free “Ice Cream Sundaes”

8 oz of milk or dark chocolate (can use a bar or chocolate chips)

¼ cup of dairy-free margarine

Topping: 1 bag of Valentine’s Day candies—small cinnamon hearts, heart-shaped candies or candy buttons or red candy sprinkles.

In a large microwavable bowl, add ¼ cup of non-dairy margarine and melt in the microwave for about 20 – 30 seconds.  Stir in 1 bag of chocolate chips or chopped chocolate and stir until melted.  Line a cookie tray with parchment paper and lightly grease.  Spoon/pour chocolate onto prepared tray and spread evenly with a spoon.  Top with your choice of candies.  Set tray in the fridge until set.  Just before serving, using your hands, break the bark into bite-size pieces.

Spoon TOFUTTI PREMIUM® non-dairy frozen dessert into dessert bowls and top with hunks of homemade Valentine’s Day Chocolate Bark.
