Make Mother’s Day memorable with a dairy-free meal

Make it a Mother’s Day to remember with a special spread that shows mom how much you care and also takes into consideration her dietary restrictions.

For mothers with food allergies or lactose intolerance, or vegan moms who refrain from animal products completely, dining out on Mother’s Day can be tricky. That’s because Mother’s Day brunch at a restaurant typically features dishes prepared with dairy, eggs and meat.

This year, why not skip the reservation and instead whip up a morning meal mom can truly delight in? With the following menu ideas to inspire you, you’ll be well on your way to a tasty meal that is certain to make mom proud!

A toast to mom
Give mom the full VIP treatment with a mimosa toast in her honour. Fill champagne flutes with one part sparkling wine and one part fresh orange juice. For a more adventurous take on the classic cocktail, replace the orange juice with tangerine or grapefruit juices.

The main attraction
Tofu becomes convincingly egg-like when scrambled with turmeric powder and other flavourful seasonings.

For a southwestern scramble, mash the soy curd with a fork, and then sauté in oil with veggies, including finely chopped onions and bell peppers. Add a pinch of ground coriander, ground cumin and turmeric, and salt and pepper to taste. Next, stir in black beans for added flavour and protein. Garnish each serving with avocado slices, spicy salsa and roughly chopped cilantro. Serve with toast and a generous dollop of Tofutti Sour Supreme.

A sweet ending

To cap off the meal, consider an easy-to-bake, dairy-free cheesecake using a store-bought vegan crust. To prepare the filling, simply mix two tubs of Tofutti Better Than Cream Cheese with the juice and zest of half a lemon, sugar and pure vanilla extract to taste, and a pinch of salt.
