Luscious Peach Topped Cheesecake in a Jar with Fresh Ontario Peaches

Peaches are of course delicious eaten whole, but peaches can also be grilled, sautéed, pureed for drinks and sauces or preserved to enjoy all year round. Yummy Cheesecake in a Jar Topped with Fresh Ontario Peaches

To make crust:
In a food processor, whirl 10 homemade or purchased vegan cookies with ¼ cup of vegan margarine or vegetable oil. Mixture should be crumbly. Spoon mixture into six small (125 ml) oven proof jars or oven proof ramekins. Place jars on a cookie tray and set aside while making the filling.

To make filling:
In a bowl mix two tubs of Tofutti Better Than Cream Cheese the juice and zest of half a lemon, a pinch of salt and sugar and pure vanilla extract to taste. Pour the filling over the cookie crust in the jars, place in oven and bake at 350 degrees F for 20 minutes. Cool jars and refrigerate several hours or overnight. The fresh peach topping should be made just prior to serving.

To make topping:
Gently wash six fresh Ontario peaches. Cut peaches in half and remove and discard the pit. Brush each cut peach half with lemon juice and then honey or maple syrup. Place peach halves cut side down on a greased barbeque grill and grill over medium heat with the lid closed for approximately five minutes. Remove peaches from the grill, let cool slightly, cut into slices and serve warm over the chilled cheesecake layer and serve immediately.
