September is one of the busiest months of the year for families. While we are excited to see the children go back to school and get back to their routine, it also means packing lunches, shuffling kids to lessons and games—it’s busy. That’s where a few simple, easy dairy-free recipes for lunch box and after school snacks come in handy.
Banana Smoothie to Go
1 banana, cut into pieces
1 cup almond or coconut milk
2 Tbsp SOUR SUPREME®
1 Tbsp maple syrup
2 ice cubes
Place all ingredients into a blender or smoothie maker and whirl until smooth and creamy. Pack an insulated Thermos or a water bottle along with a frozen ice pack to keep the smoothie cold until lunch time.
Asian Chicken Wraps
½ Tbsp olive oil
1 clove of garlic, minced
½ tsp ginger
2 tsp soya sauce
1 cup shredded carrot
Thin slices of red bell pepper
8 oz ground chicken, cooked and crumbled
Romaine lettuce leaves, washed and dried
whole wheat tortillas
Top with: 1 Tbsp of SOUR SUPREME®
Place olive oil into a frying pan to heat and then add chicken into a pan and fry gently until cooked, breaking it into small pieces. Add spices and stir. Add carrot and red pepper slices vegetables and cook 8 minutes more. Line the tortillas with the washed and dried lettuce leaves, spoon some of the filling into the centre of each tortilla and wrap it into a roll, tucking in the two ends. Wrap tightly in plastic wrap to secure. SOUR SUPREME® has a similar taste and texture to traditional sour cream but is dairy-free and butterfat- free and contains no cholesterol. It’s the non-dairy substitute for sour cream which can be used at a 1:1 ratio to replace traditional sour cream in recipes or enjoy the delicious taste on baked potatoes, nachos and more. This product is ideal for those concerned with their fat and calorie intake.
Cream Cheese and Celery Logs
½ head of celery
1 container of Plain TOFUTTI Better Than Cream Cheese
Raisins
Wash and dry celery and cut stocks into 3-inch-long pieces or “logs.” Fill with TOFUTTI Better Than Cream Cheese and then dot with raisins and serve.
“Cheese” and Bacon Buns
½ lb bacon
1 container TOFUTTI Better Than Cream Cheese
6 whole wheat hamburger buns
In a frying pan cook bacon until crisp. Set aside to cool. Spread hamburger buns with TOFUTTI Better Than Cream Cheese
Add bacon pieces on top. If packing for lunch, wrap one or two buns in plastic wrap and place in a lunch box with an ice pack. If serving after school, buns can be heated in a 350-degree F oven for 5 minutes to warm. You can also substitute our dairy-free “cheese slices” TOFUTTI SOY CHEESE SLICES®.
