Harvest Pumpkin Bread with Non-Dairy “Cream Cheese” Icing

This bread is great for lunch boxes, afternoon snacks, dessert, or even breakfast!

Ingredients:

  • 1 ¾ cup of flour
  • 1/2 cup pecans, walnuts or sliced almonds
  • 2 ¼ tsp pumpkin pie spice
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup non-dairy margarine
  • ¾ cup sugar
  • ½ cup brown sugar
  • 3 eggs
  • 1 cup canned pumpkin (not pumpkin pie filling)

To make icing:

In medium sized bowl add 1 1/2 cup of icing sugar with 3 to 4 Tbsp of TOFUTTI BETTER THAN CREAM CHEESE® http://www.tofutti.ca/better-than-cream-cheese. Beat until smooth and creamy. You may need to add 1 Tbsp of non-dairy milk if mixture is too thick. Set aside in the refrigerator.

To make bread:

In large bowl combine flour, nuts, spices and salt. Stir to combine.
In large bowl add non-dairy margarine, brown and white sugar, add eggs one at a time and blend after each addition until mixture is creamy and fluffy. Stir in pumpkin and beat again. Mix in flour mixture and stir with spatula to blend. Beat on low just until ingredients are mixed. Pour batter into a greased 9 x 5 inch loaf pan. Bake at 350 degrees F for 1 hour. Take pan out of oven and use a toothpick to see if bread is done (tooth pick inserted should come out clean). If not, bake for an additional 10 minutes. Cool bread on rack for 10 minutes. Remove from pan and place on a plate or cutting board. Pour icing over top and spread or let icing drip down sides. Garnish with additional nuts and serve warm or let cool.

For dessert, put 4 slices of Harvest Pumpkin Bread on a large dinner place and place in the microwave and heat for 1 minute. Put on individual plates and serve with big scoops of TOFUTTI PREMIUM® non-dairy frozen dessert.
