Get fired up for Father’s Day with a barbecue

With warm weather and long summer days upon us, why not skip brunch this Father’s Day and celebrate Dad with an outdoor barbecue instead?

Even if Dad prefers a plant-based diet to traditional cookout fare, such as grilled meat, there are plenty of vegan options to throw on the barbecue for a hearty meal that will satisfy a big appetite.

The following vegan barbecue recipes will help you plan the perfect menu to show Dad how much you care. Plus, these dishes are great for grilling, and certain to get Dad fired up for Father’s Day!

Grilled jalapeno poppers

Add heat to your barbecue with this spicy jalapeno pepper appetizer. In a bowl, combine half a cup of Tofutti Better Than Cream Cheese with half a cup of Tofutti Sour Supreme. Stir a handful of freshly sliced scallions into the mixture, and season with salt and pepper.

Carefully cut 10 jalapenos lengthwise, and de-seed before stuffing the peppers with the scallion mixture. Once stuffed, place the peppers stuffing side up on a greased grill rack, and cook until the bottoms are charred. Serve on a platter with a sprinkle of freshly chopped cilantro.

Marinated mushroom burgers

Compared with grilled veggie burgers, which tend to crumble, portobello mushroom caps keep it together on the barbecue. Plus, mushrooms are meat-like in texture, which makes them ideal for absorbing flavour and sandwiching between a burger bun along with Tofutti Soy Cheese Slices.

For a simple marinade, combine a quarter cup of balsamic vinegar with two tablespoons of olive oil and a teaspoon each of dried basil, oregano and minced garlic. Add salt and pepper to taste. Marinate the mushroom caps for two hours before grilling.

Spiked peach and cinnamon milkshake

Shake up Father’s Day dessert with a dairy-free take on a milkshake, and a spiked version just for Dad. In a blender, combine two tubs of Tofutti Premium Vanilla Frozen Dessert with four ripe peaches (peeled and cubed), a tablespoon of peach preserves, a pinch of cinnamon, and a dram or two of Dad’s favourite bourbon. Blend until smooth, and enjoy!
