Steps to making a Toffuti Cuties cake your family will love:
- Stack Tofutti Cuties in a square or rectangular dish. Spread dairy-free, store-bought or homemade frosting (see recipe below) all over the Tofutti Cuties. Ensure the frosting is at room temperature, and take care to work swiftly so the sandwiches don’t melt.
- Skip the oven for the refrigerator, and place the cake carefully in the freezer. Once the cake has been frozen for some time, pull it out of the freezer and smooth the frosting using a knife dipped in cold water.
- Decorate your cake with sprinkles, candy or non-dairy icing. Pop it back in the freezer, covered, until it’s ready to serve.
Dairy-free frosting:
½ cup coconut oil, softened
½ cup dairy-free shortening or margarine, softened
2 tsp. pure vanilla extract
4 cups sifted, confectioners’ sugar
2-4 tbsp. dairy-free milk
In a mixer, whip the coconut oil and shortening or margarine until smooth. Add the extract, and confectioners’ sugar cup-by-cup, blending the mixture in between each addition. Add non-dairy milk until the frosting reaches a desired consistency.
