Back to school time is a perfect opportunity for parents to hone their creative and kid-friendly cooking skills!
Packing a healthy and nutritious lunch with foods that appeal to young eaters, however, can be a challenge. Whether you pass or fail the lunchtime test often is indicated by your child’s lunch box coming home empty or nearly full.
With the following fun and easy-to-prepare recipes and snack ideas, you can be well on your way to school-time nibbles that make the grade for even the fussiest eaters.
Plus, in addition to being delicious, the following recipes are dairy-free to accommodate lactose intolerances and milk allergies.
“Cheese” and crackers
Your favourite shaped cookie cutters will come in handy for this delectable snack, which is much healthier than the processed, pre-packaged store-bought cheese and cracker alternative. Cut out shapes of organic, sliced luncheon meat and your choice of Tofutti Soy Cheese Slices, which come in American or mozzarella styles. Pack the meat and dairy-free cheese shapes with multi-grain crackers for your child to enjoy assembling, and delighting in, at school!
Ants on a log
This crunchy snack is ideal for recess, or munching alongside a healthy lunch, and is certain to put a smile on your child’s face. Simply cut fresh celery stalks in half, and then spread your child’s favourite flavour of Tofutti Better than Cream Cheese within the celery’s ribs. Top the dairy-free spread with a row of raisins, and you’ve got ants on a log — a snack that’s as fun to eat as it is tasty!
Smear a large, whole-grain tortilla with your favourite dairy-free dressing or spread, such as vegan mayonnaise or mustard. Layer the tortilla with preservative-free deli meats and fresh veggies, such as thinly sliced cucumber, bell peppers and shredded lettuce. Top with slices of Tofutti Soy Cheese, and roll up the tortilla. Cut the tortilla widthways to reveal a pinwheel of colour, and for bite-sized pieces that are perfect for small hands to pick up and enjoy!
