Decadent Homemade Chocolate Valentine’s Day Cake

Chocolate has been called “Food for the Gods” with good reason. Not only is it the most popular flavour in North America, chocolate is said to be good for you!

This homemade chocolate cake recipe is a winner every time!

Ingredients:

1 ½ cup sugar

1 ¾ cups of flour

1 cup cocoa powder

1 ½ tsp baking powder

1 ½ tsp baking soda

1 tsp salt

1 cup non dairy milk such as soy or almond milk

½ cup vegetable oil

1 cup of boiling water with 2 tsp instant coffee or hot chocolate

Topping: 1 cup chocolate chips

Preheat oven to 350 degrees F. Lightly grease two round cake pans or one rectangular 13 x 9 inch pan.

In large stand mixer bowl add eggs, sugar, oil, non-dairy milk and beat until creamy. In a separate bowl mix together flour, baking powder, baking soda and salt. Fold dry ingredients into wet ingredients and stir with a spatula and then beat on medium speed until thoroughly mixed. Boil the kettle. Pour 1 cup boiling water into a measuring cup and then add 2 tsp of instant coffee or hot chocolate mix and stir. Carefully add the boiling liquid to the batter. Beat on low until combined. Pour into cake pans and bake 35 to 40 minutes until toothpick inserted into cake comes out clean. Sprinkle chocolate chips over the cake while still warm and spread with a knife to “ice” the cake.
