Enjoy delicious berries in season like fresh strawberries, blackberries, raspberries, cherries and peaches. Thanks to the abundance of frozen fruit now available in grocery stores, we don’t need to wait until summer to enjoy berries—just reach in the freezer and grab a bag of your favourite frozen fruit. Here are a few delicious ways to add more fruit to your daily diet.

 

Blueberry Banana Smoothies

2 bananas, sliced

1 cup of fresh or frozen blueberries

1 cup TOFUTTI SOUR SUPREME®

1 cup almond or soy milk

1 Tbsp maple syrup or granulated sugar

4 ice cubes

 

Put all ingredients into a blender and whirl until smooth and creamy.

(To make this into a milkshake, replace the “sour cream” with icy cold TOFUTTI PREMIUM® non-dairy frozen dessert

 

 

Field Berry Stuffed French Toast

Your choice of a mixture of blackberries, blueberries, raspberries or strawberries (to total 1 1/2 cups) Reserve a few berries to use as a garnish.

½ cup Plain TOFUTTI BETTER THAN CREAM CHEESE®

1 Tbsp maple syrup

8 slices of whole wheat bread or Challah bread

3 large eggs, beaten

1/3 cup of almond milk

1 tsp vanilla extract

 

Serve with maple syrup and fresh whole berries

In a bowl add 1 cup of mixed berries and stir. Using a fork, mash about half of the berries, leaving the others whole.  In another bowl, beat together the TOFUTTI BETTER THAN CREAM CHEESE® with the maple syrup. In a shallow bowl, whip eggs and almond milk and vanilla together with a fork.

Lay four pieces of bread on a wooden board or plate. Divide the berry mixture between the four slices and spread to cover (like jam). Next spread the “cream cheese” filling and then top with other four slices to make “sandwiches”. Lightly press to seal around edges. Dip the sandwiches into the egg mixture and flip to coat both sides. Spray a large nonstick pan with cooking spray (or add 1 tsp vegetable oil) and place two of the sandwiches in the pan side by side without overcrowding.

Cook over medium high heat about 5 minutes on one side and then flip the sandwiches over and cook on the other side, until both sides are golden brown. Make in two batches. Top with fresh reserved berries and maple syrup. Yum!
