Apples, Pumpkins and Cinnamon, Oh My!

This moist pumpkin bread holds up well when packed in a lunch box, while the warm cinnamon apple crisp is the perfect ending to a winter meal.

 

Pumpkin Spice Bread With “Cream Cheese” Icing

 

For pumpkin bread:

1 cup vegetable oil

3/4 cup granulated sugar

1/2 cup brown sugar

3 eggs

1 cup pumpkin purée (not pie filling)

1 3/4 cup all-purpose flour

2 tsp pumpkin pie spice

1 tsp cinnamon

1 tsp baking soda

1/2 tsp salt

 

For icing:

1 cup icing sugar

1 tsp vanilla

1 pkg Tofutti Better Than Cream Cheese

1 tbsp almond milk or coconut milk or water

 

In the bowl of a stand mixer, add oil, sugars, eggs and pumpkin purée and mix until creamy. In separate bowl, mix together flour and spices. Gently add dry mixture to wet ingredients in mixer bowl. Whip on low just until blended.

 

Preheat oven to 350°F (175°C).

 

Spray a large loaf pan with cooking spray. Pour batter into pan. Bake 1 hour, or until toothpick inserted comes out clean. Cool, and then frost with icing. (You can also make 12 muffins from this recipe, using a muffin pan lined with paper liners. Bake 25 minutes.)

 

To make icing: in the bowl of a stand mixer, blend ingredients together; whip until smooth and creamy. If too thick, add more liquid until desired consistency. Frost cooled bread or muffins.

 

 

Apple Cinnamon Crisp with “Ice Cream”

 

For filling:

6 large apples, peeled and cut into slices

1/4 cup granulated sugar

1 tsp cinnamon

2 tsp lemon juice

 

For topping:

1 1/2 cups oats

1/4 cup vegetable oil or non-dairy butter, melted

2 tsp cinnamon

1/2 cup brown sugar

 

Preheat oven to 350°F (175°C). Peel and slice apples into a large bowl. Add sugar, cinnamon and lemon juice and stir to coat. Pour into a 9 x 13 inch glass baking dish.

 

Use same bowl to make topping. Add all ingredients. Stir with a fork until crumbly. Pour crumble over apples. Bake 35 to 40 minutes. Remove from oven and let cool for 5 to 10 minutes.
